Responsibilities
Responsible for pastry operations and pastry & bakery production. Ensure guest satisfaction by providing the highest quality products through monitoring and supervising the overall preparation of desserts and pastry production. Review Pastry/Bakery food items in inventory and control weekly consumption of production to ensure food cost targets are met. Review all food items to be ordered for the Pastry and Bakery Department with the Executive Chef and Provision Master. Approve all food requisitions for pastry and bakery departments. Evaluate crew members working in the Pastry and Bakery Departments and schedule all crew members working in these departments.
Qualifications
Diploma from a recognised apprenticeship program or equivalent.
Minimum 4 years experience in a similar environment, with at least 2 years of supervisory experience in a 4-5* hotel.
Experience in banqueting facilities or fine dining restaurants.
Culinary diploma and specialist patisserie qualifications.
Fluent English mandatory.
Compensation & Benefits
